Kolkata’s Refined Mughlai Comfort Curry

Chicken Rezala emerged from Bengal’s Mughlai culinary heritage, eventually becoming one of Kolkata’s most beloved celebratory curries. Unlike heavily spiced meat dishes, rezala is admired for its pale creamy gravy, delicate aroma, and luxurious texture shaped by yogurt, ghee, whole spices, and patient slow cooking.

Served traditionally with roomali roti, paratha, or fragrant pulao, Chicken Rezala often appears during festive gatherings, wedding feasts, and leisurely family meals across Bengali households.   • 1 tsp ginger-garlic paste
  • Salt to taste
